Question 2:     Which is the best way to cut pies or flans to prevent the back of the pastry breaking away from the product ?

Cutting pies or flans with the point of the knife starting in the centre and cutting outwards is NOT the best way to portion of these products. (Refer to the Diagram 2). These products should be cut from the outside edge, cutting towards the centre. (Refer to Diagram 1 below).

This method gives the best result. Press down in the direction of the arrow.
