What is gluten?   Which Kooka Brotha's products are gluten-free? Currently 11 products in the 2004-5 range are gluten free.

Gluten is a protein found in cereal grains. These grains are members of the grass family consisting of wheat, oats, barley, rye, triticale and their derivatives. Traditionally cake batters and pastries are mixtures of flour and fat moistened with a liquid mixed to a batter or kneaded to a dough. The type of flour used for pastries, cakes, puddings and desserts is wheat. Wheat flour derivatives contain the protein gluten. When mixed with water this protein forms a cohesive elastic mass. Gliadin is the part of gluten that gives it elasticity. The elasticity assists in trapping carbon dioxide gas in the dough which enables the finished product to be aerated. Aeration is an essential feature of many baked dessert products.

If you or your customers are following a gluten-free diet you should check the ingredient listing on the label that appears on the top of each box to verify that the information is correct This applies to any product listed on this site.
